The multifractal detrended fluctuation analysis (MF-DFA) is used to verify whether or not the returns of time series of prices paid to farmers in original markets can be described by the multifractal approach. By way of example, 5 weekly time series of prices of different breeds, slaughter weight and market differentiation from 2000 to 2012 are analyzed. Results obtained from the multifractal parameters and multifractal spectra show that the
price series of livestock products are of a multifractal nature. The Hurst exponent shows that these time series are stationary signals, some of which exhibit long memory (Merino milk-fed in Seville and Segureña paschal in Jaen), short memory (Merino paschal in Cordoba and Segureña milk-fed in Jaen) or even are close to an uncorrelated signals (Merino paschal in Seville). MF-DFA is able to discern the different underlying dynamics that play an
important role in different types of sheep livestock markets, such as degree and source of multifractality. In addition, the main source of multifractality of these time series is due to the broadness of the probability function, instead of the long-range correlation properties between small and large fluctuations, which play a clearly secondary role.

Esta investigación se propone el estudio del origen y la evolución del patrimonio vitivinícola en México, investigando las circunstancias históricas que rodearon la introducción de la Vitis vinífera en este territorio durante el período de la conquista española y su posterior difusión a lo largo de diversas regiones de la Nueva España. Se busca comprender cómo esta expansión respondió tanto a las necesidades alimentarias de los conquistadores como a las prácticas misionales de la época. Asimismo, se examina el devenir histórico de la vitivinicultura en México, transitando por diversas etapas, algunas de las cuales presentaron desafíos y dificultades para el sector. Sin embargo, en las últimas décadas, se ha evidenciado un renacimiento en la industria vitivinícola, coincidiendo con el florecimiento del turismo enológico. Las bodegas, en respuesta a este fenómeno, han transformado su enfoque no solo en la producción y venta de vinos, sino también en la creación de experiencias sensoriales y vivenciales para sus visitantes , apoyadas en una nueva arquitectura que les permite explorar los métodos de producción y establecer un contacto cercano con los viñedos. Para lograr estos objetivos, la investigación se inicia con una revisión del desarrollo histórico de la vitivinicultura en México desde el periodo de la conquista hasta la actualidad, destacando el surgimiento del enoturismo como una consecuencia del auge de la vitivinicultura en el país en las últimas décadas. Virtual reconstruction is defined as the visual recovery of a building or object through the creation of a three-dimensional model of the asset to be reconstructed, in a historical context. To provide the degree of veracity to the virtual reconstructions performed in the scope of heritage, the so-called historical-archaeological evidence scale emerged. Some authors have already used this methodology to provide their reconstructions with the degree of evidence, although none of the current propositions of evidence scales have been standardised to date. Moreover, it is still important to disseminate such scales as much as possible, since it has been shown that neither experts in this field of knowledge nor common users know about this methodology. The aim of this study was to design and create a new proposition of historical-archaeological evidence scale based on the achromatism and implement it in the ‘Baker’s House’ at the archaeological site of Torreparedones (Baena, Córdoba, Spain). To carry out this investigation, it was essential to compare and analyse each proposition of historical-archaeological evidence scale. The qualitative and quantitative studies about the existing scale propositions also played a fundamental role in the realisation of this work. These results, in addition to the chromatic study, support the creation of a new proposition of historical-archaeological evidence scale, designed for any type of viewer. Each phase of the study met the quality standards established for this type of research.

Torreparedones archaeological site is in the heart of the Cordoba countryside. The documentation of the domus “The Bakers’s house” took place, being a key heritage asset for understanding its spaces.
The domus, is named after the conservation of the floor from a Roman bread oven. Also, the preservation of the base of a Roman rotating mill implies the elaboration of bakery products in this house. Due to the lack of archaeological remains, it is necessary to carry out a thorough literature review, working on the interpretation of each area. Thanks to the bibliography of contemporary domus, the interpretation of the residential area spaces is achieved, as well as the interpretation of architectural and decorative issues.
The main research objective was to obtain solid documentation to perform the 3D model of the Baker’s domus and its display by decoding QR code, that facilitates the conservation of existing Andalusian Archaeological heritage.
