Crecimiento y desarrollo de los tejidos en canales de corderos de raza segureña

Abstract

A study was made of the relative and ponderal growth of tissue taken from the carcasses of 32 lambs of the Segureña breed, 16 male and 16 female, slaughtered at the ages of 21 to 180 days. Dissection of the left side of the carcass in the male animals showed mean values ranging from 1348 g to 4504 g of muscle, 579 g to 1538 g of bone and 545 g to 3038 g of fat. Values obtained for the females were as follows: 1176 g to 3790g of muscle, 512g to 1190g of bone and 436 g to 2922 g of fat. For the whole group of animals, irrespective of sex, the allometric coefficients of the tissue in relation to the total weight of the half-carcass were as follows: 0.744 + 0.027 for bone, 0.958 + 0.025 for muscle, and 1.343 + 0.059 for total fat content. Timewise, the rate of growth stayed constant in the bone and muscular tissue, while the total fat content increased at the same rate as the half-carcass until the age of 90 days in the male and 75 days in the female, from then onwards showing a considerable rise.

Se estudia el crecimiento, ponderal y relativo, de los tejidos que componen la canal en 32 corderos, 16 machos y 16 hembras, de raza Segureña, sacrificados entre los 21 y 180 días de edad. La disección de la media canal izquierda arroja valores medios, para los machos, de 1.348,5 a 4.504,9 g para el músculo, 579 5 a 1.538,0 g de hueso y 545,0 a 3.038,1 g de grasa. En las hembras, los valores obtenidos son: 1.176,1 a 3.790,5 g de músculo, 512,6 a 1.191,6 g de hueso y 436,2 a 2.922,9 g de grasa. Para el conjunto de animales, sin distinción de sexo, los coeficientes alometricos de los tejidos respecto al peso total de la media canal fueron : 0,958 + 0,025 para el músculo, 0,744 + 0,027 para el hueso, 1,343+ 0,059 para la grasa total. Por periodos, el ritmo de crecimiento se mantiene constante en los tejidos muscular y óseo, mientras que la grasa total crece al mismo ritmo que la media canal hasta los 90 días en los machos y 75 días en las hembras experimentando un considerable aumento a partir de estas edades.
