El monopolio aceitero en el señorío de Baena (siglo XVIII): un estudio histórico-técnico aplicado al molino del Duque

Abstract

El cultivo del olivar es y ha sido un importante motor de la economía y sociedad en el sur de la provincia de Córdoba, al igual que en otras zonas de Andalucía. El cultivo del olivar ha formado parte del paisaje de nuestra tierra desde tiempos inmemoriales. La historia ha influido de forma directa en la transcendencia del mismo y en la conformación del paisaje agrícola que conocemos hoy. Esta tesis doctoral se ha encaminado a profundizar en el monopolio aceitero que existió en Baena, así como la realización de un estudio del pretérito Molino Ducal con tecnología preindustrial de dicha villa. Desde que se le concede el señorío de Baena a Pedro Fernández Carrillo a principios del S.XV, se le otorga el derecho sobre el único molino aceitero que existía en la Villa de Baena, además de quedar tajantemente prohibido el moler en otro molino que no fuera el del Señor Duque, y construir otros molinos destinados a tal fin en el término de la Villa. Los vecinos están obligados a utilizar dicho molino y por ello además debían de pagar la maquila establecida. En contraprestación, el señor Duque debía de mantener las instalaciones. Todo ello generó gran controversia, lo que supuso que los vecinos y hacendados pleitearan contra el señor Duque con el fin de extinguir tan deplorable derecho. Se ha indagado en las consecuencias que tuvo el derecho de estanco sobre los molinos aceiteros y el cultivo del olivar, tanto a nivel económico, como social, y de cómo al ser eliminado dicho privilegio, tras el fatigoso y dilatado pleito, se incrementan el número tanto de plantaciones de olivar como de almazaras dónde poder moler la aceituna y extraer el preciado aceite. Además existe un incremento del interés por conocer el patrimonio agroindustrial que existió en nuestra tierra, y la profundización en él puede ser aprovechada por el creciente oleoturismo además de proporcionar valiosa información que puede ser utilizada para la comercialización del aceite de oliva.

Olive cultivation is and has been an important engine of the economy and society in the south of the province of Cordoba, as in other areas of Andalusia. It has been part of the landscape of our land since many centuries ago. History has had a direct influence on its transcendence and on the conformation of the agricultural landscape that we know today. This doctoral thesis deepens in the oil monopoly that existed in Baena, as well as in the realization of a study of the Ducal Mill with the preindustrial technology of this town. Since Pedro Fernández Carrillo was granted with the dominion of Baena in the early fifteenth century, he was given the right over the only oil mill that existed in that city, as it was prohibited both the construction of new mills and the grinding in any other which was not the Duke´s one. For this reason the neighbours were forced to use these properties and, in addition, they had to pay the established rate. All this generated a great controversy, which supposed that all the population pleited against the Duke with the purpose of extinguishing that right. Both economically and socially, the consequences of that kind of rights on oil mills and the cultivation of olive trees have been investigated, as well as the increase in the number of olive groves and mills where the olives could be ground and extracted the precious oil, after the fatigue and long struggle. In addition, there is a great interest to known the agroindustrial heritage that existed in our land. This may be to provide valuable information, which may be usefull, for the marketing of olive oil as well as being exploited by growing oleotourism.
