Gastronomía y salud en Al-Ándalus (VIII-XV)

Abstract

La alimentación y la dieta en al-Ándalus fueron esenciales para la vida cotidiana de la población, pero también para la medicina de la época. Además, el acceso a los recursos y el consumo eran heterogéneos. El desarrollo de una agricultura propia y el crecimiento de los zocos como centros de distribución también participaron en el desarrollo de una cultura de los alimentos única en toda la cuenca mediterránea. El objetivo del trabajo es estudiar la caracterización todos estos elementos y la interrelación entre ellos que da forma a uno de los mayores activos del legado andalusí a nuestra sociedad.

Food and diet in al-Andalus were essential for the daily life of the population, but also for the medicine of the time. Furthermore, access to resources and consumption were heterogeneous. The development of their own agriculture and the growth of the souks as a distribution centres also played a part in the development of a food culture that was unique in the whole Mediterranean basin. The aim of this work is to study the characterisation of all these elements and the interrelationship between them, which gives shape to one of the greatest assets of the Andalusian legacy to our society.
