dc.description.abstract | El turismo gastronómico es una tipología turística que cada vez genera más interés en la oferta de los destinos turísticos y también como factor de motivación de los visitantes. El presente artículo analiza los furanchos, locales gastronómicos tradicionales de Galicia, y estudia su relación con el turismo desde la perspectiva de la oferta para observar cómo y por qué son un atractivo turístico y cuál es la experiencia que ofrecen a los visitantes. Para responder al objetivo se ha llevado a cabo una metodología cualitativa que ha consistido en la realización de diez entrevistas a propietarios de furanchos de la provincia gallega de Pontevedra. Los resultados confirman que los furanchos son un recurso que muestra a los turistas la cocina regional y la tradición rural a partir de una experiencia auténtica. El estudio analiza los furanchos como un ejemplo de la identidad gallega y contribuye a la comprensión del papel del patrimonio culinario en la gestión y promoción del turismo gastronómico en zonas rurales. Futuros artículos deberían analizar también la perspectiva de la demanda. | es_ES |
dc.description.abstract | Food tourism is a type of tourism that is generating more and more interest as part of the tourism portfolio of destinations and also as a motivation factor among visitors. This paper analyses ‘furanchos’, traditional gastronomic establishments in Galicia, and studies their relationship with tourism from the supply perspective in order to observe how and why they are a tourism attraction and what is the experience they offer to the visitors. To achieve the objective, a qualitative study was designed and ten interviews were carried out with owners of ‘furanchos’ in the Galician province of Pontevedra. Results confirm that furanchos are a resource which shows to visitors the regional cuisine and the rural tradition from an authentic experience. The study analyzes ‘furanchos’ as an example of Galician identity and contributes to the understanding of the role of culinary heritage in the management and promotion of food tourism in rural areas.
