Contenido de plomo como fuente de riesgo por el consumo de hongos silvestres

Abstract

Se ha realizado una revisión bibliográfica sobre la importancia que tiene el plomo en la alimentación humana y más concretamente sobre el contenido de plomo en hongos comestibles silvestres. Se ofrecen datos del contenido de plomo en 165 especies referidas en medio centenar de publicaciones, de las que se hace indicación sobre su presencia y consumo en España y Andalucía. Se recoge también información sobre recomendaciones y legislación relativa al plomo en la alimentación y en aquellos aspectos relativos a los hongos comestibles.

A comprehensive review was carried out about the importance of lead content in human feeding, and particularly on lead content in edible wild mushrooms. The work presents data on content of lead in 165 species included in half a hundred of publications, referring to their presence and consumption in Spain and Andalucía. Furthermore, information about recommendations and legislation relative to lead in human nutrition and edible mushrooms is reported.
