Abstract
The extent of cheese ripening and the type of proteolysis have been studied on 12 samples of commercial bola cheese by combining quantitative PAGE electrophoresis and the spectrophotometric measurement of soluble tyrosine and soluble tryptophane.
 
Sobre 12 muestras de queso de bola comercial se han estudiado la extensión y el tipo de proteolisis, combinando la electroforesis cuantitativa en gel de poliacrilamida con la medida espectrofotornetrica de la tirosina y triptófano solubles.
